This cookbook was completed on a voluntary basis altough some payment came in the form of coffee, blueberry cake, the leftovers from the photo shoots and the occasional beer.

Friends - The Restaurant opened its door in February 2001 a part of a training initiative of the Cambodian non-government organisation Mith Samlanh/Friends. The initiative was designed to train former street kids in the skills of hospitality in an environment thet encourages self-confidence and self-expression. Our students with the support of their teachers are actively involved in all areas of the restaurant 's operation including the creation of new dishes and the design of the menu. The recipes in this book are the result of their involvement and were chosen especially by our students and teachers as their favourites. ENJOY!
